COMPARATIVE ANALYSIS OF AMYLASE, LIPASE, AND PROTEASE ENZYMES IN INDUSTRIAL BIOTECHNOLOGY

Abstract
This article presents a comparative assessment of three major industrial enzymes-amylase, lipase, and protease-focusing on their physicochemical properties and performance across key biotechnological sectors. The analysis highlights differences in substrate specificity, optimal operational conditions, and stability factors such as pH and temperature tolerance. Findings indicate that amylase is most effective in starch-based industries, lipase demonstrates high versatility in lipid transformation processes, and protease remains essential in protein modification applications. These distinctions provide a scientific basis for selecting the most suitable biocatalyst to enhance industrial efficiency and economic feasibility.
